Golden Boar - Toscana White IGT Italy
Type: Still White Wine.
Grape Varieties: 80% Trebbiano, 20% Chardonnay.
Area of Origin: Maremma, Tuscany.
Climate & Terrain: Hilly areas extending from Scansano up towards Pitigliano, historically
the area most suited to white wines. The vines are grown at an average altitude of 656ft
ASL. in volcanic and sandy soil.
Vinification: The grapes are hand-picked from mid-August to mid-September and
are immediately protected from oxidation by CO2. The fermentation is for 2 weeks,
and is carried out separately for each grape variety in 3963gal. stainless-steel tanks at
a controlled temperature of 59°F.
Aging: 3 months of fining on noble lees. The blend is produced in January and the
wine is bottled by March, aged for 2 months and put on the market in May.
Characteristics: Straw-yellow color with golden highlights. Bouquet of floral notes
with hints of white-fleshed fruit (peach). Refreshing and well-balanced flavor, the right
balance of acidity and good length.
Wine & Food Pairing: An ideal accompaniment to white meat and fish and perfect as
an aperitif.
Serving Suggestions: Serve in wine glasses suited to young wines at a maximum
temperature of 50°F.
